Corn-free Girls Can Cook, Too

So I've been searching around for recipes that are corn free and decided to try this one:

Changes for myself:

1 teaspoon cream of tartar
1 teaspoon baking soda
Whole wheat pastry flour

Topping:
1/3 cup of white sugar and 1 teaspoon of cinnamon.

I started to feel just awful right before add the wet ingredients to the dry ones and the family sent me to the room, turned the air conditioner on, and I had to recline here.  So, Honorable Son #2 and a friend of his, along with Delicate Flower, finished preparing the cake.  I was able to take it out of the oven, though.

It's good.

Not as moist as I would like, so next time I will add a little more butter to the recipe and find some safe brown sugar for the topping.  I don't know if I will dare use apples, since they are so full of pesticides and corn-based wax.

I don't react as terribly or violently to corn as some people I am acquainted with over the internet, but ingesting corn or corn-derived products make me ill.  So, I'll have to think hard about the apples.  Maybe a mango topping or fresh pineapple would be nice or better yet, pineapple upside-down cake!!!

Pineapple, cinnamon, and honey, with some oats or a little flour mixed in- would be a pretty yummy topping!

And I'm glad you don't react as strongly- it is hard! I think that using something instead of apples is a fantastic thing to do- may as well be safe!

Nikki, I've never eaten pineapple with cinnamon... I might try it, though. :)
